The weekday breakfast project: entry #2
So, my quest to find easy weekday breakfast solutions continues :o)
My first entry was about frozen portions of steel-cut oatmeal. But of course, man cannot survive on oatmeal alone, lol...
.
And that's where the amazing egg comes in...
I honestly didn't realize that eggs were microwavable. Well, at least not without some special contraption.
I have a relative who is literally the gadget king; He always manages to find tools for the most random tasks...and one year he gave me an "egg wave", lol.
Now, I have to be honest. I'm not keen on gimmicky gadgets like this, they just end up cluttering the kitchen. Plus, let's face it, this thing is just plain silly looking! But I did love the convenience of having a quick serving of hot eggs in the morning, and with little mess.
Luckily, it turns out that you can still have quick, fluffy microwavable eggs without a funny-looking plastic thingy. All you need is an ordinary bowl from your kitchen :o)
This method yields something in between an omelet and scrambled eggs.
Also, since everyone's microwave is different, watch the eggs so they don't overcook. Yours may be done in only a minute.
[Caution]Never microwave a whole, shell-intact egg, this is dangerous![/Caution]
Quick & Easy Microwavable Omelet
serves 1
2 large eggs
1 scallion, chopped
dash of salt or adobo seasoning
black pepper to taste
butter or non-stick spray for bowl
grease or spray small microwavable bowl with oil.
In a separate bowl or container, beat the eggs, seasoning, and scallion with a fork.
Pour into the prepared bowl and microwave on high for about 2 minutes.
You’ll see the eggs soufflĂ© up a bit, that’s normal.
Serve as usual :o)
Oh, but it doesn't stop there. You can also do this with egg whites for a lighter version (I had a whole bunch leftover after making the quindins). 2 egg whites will take about 1 1/2 - 2 minutes on high.
And to take it even one step further, you can make a quick burrito:
3-Minute Breakfast Burrito
2 eggs or egg whites
seasoning and salt
chopped scallion
salsa
grated cheese
1 8-inch flour tortilla
butter or oil
Follow the same directions as the microwavable omelet. After you’ve cooked the egg, microwave an 8-inch whole wheat tortilla for about 20 seconds, just until it’s warm and flexible.
Top with the egg, grated cheese, and some salsa…then roll it up and enjoy!
